Ingredients:
Grandma's Tomato Salad (recipe here: tomato salad ) - this batch was made with a package of grape tomatoes, sliced in half, plus salt, ground pepper, 2 T white wine vinegar, 4 large fresh basil leaves cut up with kitchen scissors, and 2-4 T. olive oil.
One package frozen quick-cook ravioli
Crumbled goat cheese or grated parmesan for garnish
Salt and olive oil for cooking the ravioli
Prepare the tomato salad so that it starts to marinate and develop juice. Boil water for the ravioli, add salt (1 T.) to the cooking water, cook the ravioli per package instructions (probably for 5 minutes or until the ravioli float). Carefully drain and toss with olive oil. Serve topped with a good-sized portion of the tomato salad and garnished with cheese; the dish will be warm but not hot. Heat leftovers slightly in microwave (30 sec.) or eat cold.
