Aunt Norah's Easy Cole Slaw and Recipe for Nicaraguan Slaw (again, no pics, sorry!)

 Aunt Norah’s Cole Slaw

Shredded cabbage (bagged, shredded cabbage or slaw mix from the grocery store - check expiration date to get the freshest you can) - or chop or shred a medium-sized head of cabbage, discarding the core, adding a shredded fresh carrot if you want

2 Tablespoons dried chopped or minced onion

3 Tablespoons cider vinegar

1 Teaspoon white sugar

1/2 to 2/3 cup mayo

ground pepper

1 Teaspoon Original Mrs. Dash or dried dill weed

¼ to ½ cup orange juice or milk, as needed

Mix all ingredients in a big bowl, store in refrigerator for 20 minutes or so before eating, to allow the dried minced onion to soften. 

Nicaraguan Slaw

Shredded cabbage

1 chopped tomato

1 chopped carrot

chopped red onion

½ cup cider vinegar

1/8 cup water

juice of 1 lime

½ Teaspoon salt

ground pepper

chopped fresh cilantro (optional)
