Grandma's Tomato Salad



Ingredients:

Fresh tomatoes - 3-4 medium, chopped into chunks
Salt to taste (maybe 1/2 teaspoon)
Fresh ground pepper (a few twists)
2 tablespoons dried crushed basil or 6-8 fresh leaves sliced up
Olive oil
Balsamic vinegar to sprinkle (optional)
Goat cheese or feta, to crumble over the top (optional)

Crusty bread fresh or croutons or bruschetta to toss with the salad.

Mix ingredients, let sit at room temperature for a bit to allow the juice to come out (a result of the salt). Toss with bread chunks or croutons. Top with cheese if you are making a meal of it. (Cheese = protein.) Serve. Optional extra: add a sliced cucumber to the tomatoes.
