Grandpa's Blue Cheese Dressing (Recreated) - Salad Dressing or Dip


So, the picture doesn't really make this very appealing, but this is a delicious salad dressing or dip. (It's nice used as a dip with saltine crackers, too.) I've recreated the dressing Grandpa used to make, after our trip in June to San Francisco. On the trip, we had dinner at the Leatherneck restaurant, and they served a salad consisting of an iceberg lettuce wedge with chopped red pepper and chives and topped with blue cheese dressing. It reminded me of the dressing Grandpa used to make.

Blue Cheese Dressing

Combine all ingredients in a medium-sized bowl. Refrigerate, keeps for a few days - not forever because no preservatives. You can thin it with a little milk if desired. No salt needed because the cheese is salty. Substitutions for some of the ingredients are below.

1/2 cup crumbled blue cheese (break up with fork if the lumps are big)
2/3 cup mayonaise
2/3 cup sour cream
2-3 grinds of fresh pepper
1 tablespoon white wine vinegar
1/2 teaspoon garlic juice from the minced garlic jar

Substitutions:  Any kind of vinegar; garlic powder for the garlic juice.
