Simple Baked Salmon with Mrs. Dash Seasoning

A serving of baked salmon with steamed asparagus, slices of "good bread." The sauce on the side is made by mixing a few tablespoons of mayo, a few tablespoons of sour cream, a teaspoon of capers, a teaspoon of prepared horseradish, and a teaspoon or so of chopped sun-dried tomatoes. You can substitute pickel relish for the capers, and you can add some ketchup too.

Ingredients:

Salmon filets or steaks, thawed
Olive oil or melted butter for the pan and to coat the filets (a few T.)
Salt & pepper to sprinkle on
Mrs. Dash seasoning mix - this one used Garlic & Herb Seasoning Blend

Turn oven on to 350 degrees to pre-heat. Thaw the filets or steaks in large bowl of cold water as shown below - takes 30-40 minutes. Rinse the filets, place in pan that has been coated on the bottom with olive oil or melted butter. Brush the filets with oil or butter (or turn them over in the pan to oil the top side of the fish). If the fish has skin, the skin side needs to end up on the bottom. Sprinkle the filets with salt & pepper and then sprinkle them heavily with the Mrs. Dash seasoning. Bake at 350 degrees for 10-12 minutes or more, depending upon the size of the filets. Check for doneness by cutting into one of the larger pieces - the fish should be opaque and flaky and a little bit golden brown around the edges. Serve.
