Dad's Chili - Basic Recipe


Dad's chili recipe is pretty basic, he says. Takes about 1/2 hour to put together, then cooks for another half hour or so. This makes a big batch, so use a big soup pot or dutch oven. You can use either ground beef, ground turkey or bulk Italian sausage (beef & pork mixed with sausage spicing).

Ingredients:

- 1-2 tablespoons olive oil
- About 1 1/2 pounds ground meat - ground turkey, beef or Italian sausage (bulk - without casings, from DiGregorio's if you can) - Dad says you need more ground turkey by weight if that is what you are using because it contains a lot of water
- 2 onions chopped (we generally have yellow onions in the house)

- One 28 ounce can tomatoes with the juice- the ones here are Cento brand
- 1 or 2 chopped red bell peppers (green or yellow OK too)
- 1/2 pound or more sliced fresh mushrooms (washed, ends of stems sliced off and then sliced into about 6 slices each)
- Chili powder to taste (start with 1 tablespoon full, go from there)
- Four 16 oz. cans red or kidney beans (drained and rinsed)

Put oil in the pot and turn on the heat to medium low. Add the meat and chopped onions. Sautee the meat and onions for 10 minutes or so, stirring often so that the meat doesn't stick to the bottom of the pan. Add the remaining ingredients and stir well, heat until the ingredients are heated through and simmering, then turn the heat down to low and let the chili cook for another 30 minutes or so, stirring every so often.

Dad doesn't add salt because he says there is salt in the beans, and in the tomatoes and chili powder, but taste for it and add more if you want. You could add a grind of fresh pepper, too.

Serve with grated cheddar cheese, sour cream, and a spoonful of salsa if you want. Crumbled corn chips are good as a topping too.
