German Pancake (per request) - Updated

Update - To make a larger batch, increase these ingredients: 6 eggs to 8 eggs, 1 1/3 cup flour (instead of 1 cup), and 1 2/3 cup liquid (milk & orange juice. Other ingredients stay the same (pinch of salt and one stick butter). I always omit the sugar (called for by the original recipe) from the batter. Home-made Granola

This is my own recipe, developed through trial and error. Two main pointers: the liquid mixed into the oats allows the granola to "cook" when it bakes, and the dried fruit should be added after the granola is baked (otherwise the raisins turn into rocks). Add the nuts (if you use them) during the last 10 minutes. Eat with milk, cream or yogurt. Ingredients: 6 cups (or so) rolled oats 1/2 to 1 teaspoon salt 1/2 cup honey or 1/2 cup brown sugar 1/2 cup vegetable oil 1/3 to 1/2 cup water 1 teaspoon ground nutmeg 1/2 teaspoon ground cloves (optional) 3 teaspoons ground cinnamon 2 teaspoons vanilla Optional items to add: dried fruit (see below), shredded coconut, pecan pieces or halves, hulled pumpkin seeds, wheat germ (if you use wheat germ, stir it in and bake it with the oats). 1 cup dried fruit - raisins, currants, diced dried apricots, dried cranberries, or date pieces (any combination OK) - added after baking. Quick and Dirty Cioppino If you fly to San Francisco you can get the best Cioppino made from scratch with freshly caught seafood. In St Louis you can spend hours making the sauce from scratch but then you are still limited to frozen and canned seafood. My method makes pretty good Cioppino with very little effort, at a reasonable price. Some quantities are approximate, depending on what is available.
