Three Bean Salad (Norah's recipe)


 Ingredients:

1/2 onion, white or yellow, chopped or sliced

1 package (12 oz to 1 lb) frozen mixed vegetables, thawed but not cooked (sliced green beans, chopped carrots, corn)

1 can black beans, drained and rinsed

1/2 chopped bell pepper

1/2 cup vinegar (apple cider or white wine vinegar preferred)

1/2 cup cooking oil (olive oil OK)

White sugar - anywhere from 1 Tablespoon to 1/4 cup

Ground black pepper

1/2 to 1 teaspoon salt

Thaw the frozen vegs, add remaining ingredients and toss lightly to mix, chill or serve at room temperature. 

The original recipe for Three Bean Salad (Grandma's recipe) used canned green beans, canned wax beans, and canned kidney beans, and called for 3/4 cup each of vinegar, oil and sugar. I can't remember if it had chopped bell pepper too. This is a fresher and less sugary version but still tasty.
