Christmas Cookie recipes (edited - pic added!)

Pecan Dreams after being tossed in powdered sugar while hot.

Here are two of the Christmas Cookie recipes we make every year. Pecan Dreams pic added above! Sorry, no pics yet, as we haven't done this year's baking yet! Don't forget the Fruit Cookie recipe previously posted (from the Post Dispatch years ago), as well as the Nut Crunch Candy recipe.

Pecan Dreams (nut cookies rolled in powdered sugar). This recipe was given to Grandma Esther by Aunt Eleanor. Be sure to roll them very small, and bake them until they are golden brown, at least on the bottom. (If they aren't baked long enough, they fall apart when rolled in the sugar.) We baked ours about 40 minutes this year. We also used half Bob's Red Mill Paleo Gluten-free flour in the recipe, in place of half of the regular flour, which worked just fine.

And Grandma Esther's Scotch Shortbread Cookie Recipe (I usually add 1-2 tsps vanilla extract and some chopped candied ginger or chopped dried apricots), and I also make these as pan cookies 3/8 to 1/2 inch thick, baking about 20 minutes and slicing into squares while just out of the oven, then cooling them:
